Interview Questions for NUTR 336, Assignment 1

 

Using the Interview questionnaire, interview two persons whom
you perceive to be from a different social and cultural group than yourself, as designated
below

Interviewee 1: Discuss the self-evaluation questions with a senior citizen of a different
ethnicity from your own. Inquire about meal patterns (current and in the past), cooking
methods (current and in the past), sources of food, and likes and dislikes; look for ways that
opinions about foods and food habits have changed over the course of the person’s life.
Interviewee 2: Discuss the self-evaluation questions with someone who has immigrated to
the U.S. Inquire about changes that acculturation has brought to eating patterns. Ask for the
person to describe differences in food customs, food availability, meal patterns, holiday
celebrations, etc. in the U.S. and his or her country of origin.
This assignment will be submitted via Dropbox on BeachBoard.

Meal Composition/Cycle
• How many meals do people in your culture usually eat?
• What elements (bread, rice, meat, vegetables, or other) are needed to make a meal for you?
• What is a typical serving size of meat, starch, and vegetable for you?
• Do you eat dessert? How often and at what meals?
• Is the meal served in courses? If yes, what are they?
• How often do you snack each day? What kinds of foods do you consider a snack?
• What are the major holidays you celebrate each year?
• What foods are served for holidays?
• Do you ever fast? If yes, when? What, if any, foods are avoided and or/consumed?
Rules
• What, if any, utensils do you use when you eat?
• At a family meal, who would be present? Is someone at the family meal served first? If yes, who and why?
• List three rules (for example, don’t eat with your mouth open) that you follow when you eat a meal. Do these rules change if you eat informally? If yes, how?
Attitudes
• What is your opinion about people who do not share your food habit norms? Are there any food habits that you find morally or ethically repugnant?
• Were you aware of your own food habit norms before you completed this evaluation? List two personal biases you discovered through this interview.
• How do your food habits differ from your family norms? Those of friends? Those of people you work with? In what significant ways do they differ?
• Are you willing to try new foods?
Note: For elderly interviewee to reflect on how his/her food habits have changed over the course of life (if not already elaborated upon). For immigrant, ask how immigration has affected food choices (if not already elaborated upon).
